Low Cal Recipes

I apologize that there are no pictures today. For some reason or another, the pictures will not post properly today. So, instead, I have decided to post some EXTREMELY low cal recipes. Not only are these recipes very healthy, but low in fat and calories.

These are my own, original recipes (aside from lentil soup). The calorie content in each recipe was calculated by myself carefully. I plan on posting a Recipe Page on my website.

Spinach Strawberry Salad

8 cups of raw leafy spinach
1 cup of fresh, sliced strawberries
1 cup of fresh, sliced mushrooms
1 cup of fresh sliced cucumbers
1/2 cup of diced bell peppers
1 cup of fresh brocilli

Serving size: 1 1/2 cups
Serves: 8
Calories Per Serving: 15 (no dressing)

Vegetable Stirfry

1 cup of brocolli
1 cup of snap peas
1 cup of carrots
1 cup of cauliflower
1/3 cup of terayaki sauce
2 tbsp of vegetable oil

- Heat up your pan. Once it is heated coat the pan in the vegetable oil. At this point, if you wish, you can add some garlic bits or ginger to the oil.

-Add the vegetables, stirring constantly in the oil.

-Once the vegetables have softened, add the terayaki sauce and stir for a few minutes more.

Serving Portion: 1 cup
Serves: 4
Calories per Serving: 121

Baked Spring Rolls

Lean ground pork or chicken 1/2 lb.
Chopped onion 1 cup 
Chopped mushrooms 2 cups
Chopped fresh bean sprouts, packed 3 cups
Grated carrot 1 cup
Low-sodium soy sauce 2 tsp.
Ground turmeric 1/8 tsp.
Dried crushed chilies 1/4 tsp.
Chinese five-spice powder 1/8 tsp.
Ground ginger 1/4 tsp.
Salt 1 tsp. 
Freshly ground pepper 1/4 tsp.
Chopped cooked shrimp 1 cup
Toasted sesame seeds 2 tsp.
Phyllo pastry sheets 20
Canola oil (or use cooking spray) 2 tsp.

-Scramble-fry pork with onion in large non-stick skillet or wok until pork is no longer pink. Drain.

-Add mushrooms, bean sprouts and carrot. Sauté until slightly soft. Stir in next 7 ingredients.

 -Add shrimp and sesame seeds. Stir. Drain.

Lay single sheet of phyllo pastry on non-floured working surface. Cover remaining sheets with damp tea towel. Lightly oil surface of single pastry sheet. Cover with second sheet of phyllo pastry and lightly oil its surface as well. Cut double sheet into 6 squares. Put 1 1/2 to 2 tbsp.  filling diagonally across one-third of each square. Fold closest corner over filling. Continue to roll, tucking ends in as you go. Lay seam end down on lightly greased baking sheet. Repeat until all filling is used. Drain any liquid that accumulates in pork mixture. Lightly oil surface of spring rolls. Bake in 375°F (190°C) oven for 12 to 15 minutes until crisp and golden. Makes 60 spring rolls. Serve with plum sauce.

(I apologize for the large scale recipe. I didn't have time to cut the recipe to a smaller scale. I'm used to cooking spring rolls on a large scale)

Thin Soup

8 cups of water
2 chicken boullion cubes
1 cup of brocilli
1 cup of white rice
1/2 cup of sliced carrots
1/2 cup of sliced celery
1 cup of cauliflower
1 clove of garlic
1 tbsp of  salt

- Dissolve the boullion cubes in the water
- Add the vegetables, garlic and salt
- Let simmer
- Taste, add salt if needed

Serving size: 1 1/2 cups
Serves: 8
Calories Per Serving: 40

Lentil Soup

1tbsp vegetable oil
4 green onions, chopped
3 carrots,chopped
1 potato, peeled and chopped
1 tbsp  tomato paste
2 tsp  mild curry paste
2-1/2 cups  vegetable stock
2-1/2 cups water
1 cup dried red lentils
2 cups packed fresh baby spinach

-In large saucepan, heat oil over medium heat; fry chopped green onions, carrots and potato, stirring occasionally, until onions are softened, about 4 minutes. Stir in tomato paste and curry paste.

-Add stock, water and lentils; bring to boil. Reduce heat, cover and simmer until lentils are tender, about 12 minutes. Stir in spinach.

Serving Size: 1 cup
Serves: 6
Calories Per Serving: 100

  1. I really appreciate your post. I know so many people who struggle everyday from an eating disorder. I think the first step is recognition.I think having low calorie recipes is a wonderful way to tackling a eating disorder. I’ve found this website adolescent residential treatment to be a really good source if information about treatment options to be a really good source of information about treatment options.

  3. You can also substitute chicken or vegetable stock instead of cooking oil. Some vegetables such as onions and celery do not even require additional cooking liquids- I learned this from a raw foods chef at Whole Foods.
